The eels come from the Osumi region of Kagoshima Prefecture. First they are cut open on the back, roasted and steamed before being dipped in the restaurant's secret sauce, which has been handed down since the restaurant's establishment. Then the skin is grilled thoroughly to give it a savory flavor.
There is a wide variety of dishes including the standard unaju (broiled eel on rice served in a lacquered box) and unadon (bowls of rice topped with eel). Also available is eel topped with cheese served on a bowl of rice, and rice topped with eel served in a hot stone bowl.
